Bengaluru based food startup Infini Agrotek LLP, which sells its products under the brand name Aaahara is trying to create a category of botanicals infused ready to eat food products, evenwhile expanding its product portfolio that includes cryogenically processed spices targetting both domestic and overseas consumers.
The company which recently did shipments to New Zealand and Netherlands, is eyeing markets in Australia and the US, targetting both the Indian diaspora and local consumers in these geographies.
Suresh Bafna, CEO, Infini Agrotek said the company was founded around the idea of combining traditional food wisdom with modern processing technology, and it uses cryogenic technology to grind spices at extremely low temperatures, aiming to preserve their essential oils, aroma and nutritional compounds.
Bafna said conventional spice grinding generates heat that can affect volatile oils and aroma. Cryogenic processing, which involves grinding the spices at extremely low temperatures, helps retain these properties without the need for added colours, flavours or chemicals.
The cryogenic process preserves 90-99 per cent of micronutrients and essential oils, while its products have a shelf life of up to two years, he added.
The venture emerged from Bafna’s interest in the relationship between food, nutrition and health, which intensified during the Covid-19 pandemic. After mentoring a startup in the spice sector in 2024, Bafna decided to establish an independent brand to pursue the concept.
RTC food segment
Aaahara has also entered the ready-to-cook food segment with six botanical-infused products designed to incorporate traditional herbs and other ingredients into everyday meals rather than relying solely on supplements, Bafna said adding that the range includes Medha idli-dosa mix, Bala adai, Raksha kanji, Nidra kheer payasam mix, Manshanti kichidi and Sutra pongal among others.
These products combine ingredients such as millets, dehydrated vegetables and botanicals such as brahmi and ashwagandha, Bafna said adding that Aaahara has filed patents for its product-development processes, describing cryogenic spices and botanical-infused foods as relatively new categories in the Indian market.
The company began commercial operations in August last year and completed its first year of business recently. It has exported spices to the Netherlands and shipped a consignment combining spices and food products to New Zealand in June, Bafna said.
The company is also exploring options of working with farmer producer organisations to source raw materials such as millets and spices, he said.
